Important: Always use oven gloves when handling the hot thermometer. At room temperature, the needle rests at the bottom of the dial. If the meat is colder than room temperature, the needle will move counterclockwise into the numbered temperature scale. As this thermometer is designed to remain in the food throughout cooking, the needle will not respond immediately. Allow some time for the thermometer to register the internal temperature accurately.
